I wanted to make a tatting post today, but inspiration struck in the kitchen this midday. It all started with coming home from the farmer’s market with lots of fresh vegetables. Including some lovely smelling basil. As I set aside some leaves to use in today’s salad, I thought chopping it finely and adding it to the dressing could be more fun than just throwing it with the lettuce and such… I added a clove of garlic and started chopping, and my mind went “Pesto!” I decided to go with the flow, put that and a few almonds into the mortar and crushed away! I then added a bit of olive oil, but of course, it did not feel runny enough to be a dressing, so I squished a few drops of lemon juice, and mixed thoroughly. There! I invented: Pesto-lemon dressing!
The salad itself was croutons (just dice a couple of slices of bread, sprinkle with a little olive oil and put in the oven while chopping the rest), lettuce, arugula, radish and avocado. Toss with the dressing before adding the croutons, and then lightly afterwards. I totally forgot to take photos, it was so good!
